Lets make PESTO

Steve and I recently purchased a basil plant and boy did that sucker take off!  it just keeps growing and growing…and its smells ooooh soooo good!  who doesn’t LOVE fresh pesto? I plan on putting it on PIZZA, toast with fresh tomatoes, adding it to pastas and anything else I can come up with.

Recipe for Pesto

2 bunches of fresh basil

1/4 c pine nuts (toasted)

1/4 c fresh grated parmesan cheese (higher quality REALLY pays here)

the zest and juice of 1 lemon

3-4 cloves of minced garlic

Salt and pepper to taste

1/2 cup of Extra Virgin Olive oil

 

Place all the dry ingredients into a food processor or blender and blend until everything seems combined.  at that point, start drizzling in the EVOO until you have the consistency you are happy with.  Enjoy!

  1. Yummy…. I wanna try and make my own. Recently tried a new recipe with pesto. Small bella mushroom cap stuffed with mozarella topped with a slice of roma tomato and a scoop of pesto. Baked and spinkled with parm. But its amazing with freshly made pesto!!!
