Pork Carnitas

Mouth watering NO FAIL Carnitas IN your Dutch Oven
Ingredients
- 3 LBS Pork Butt or Pork Shoulder Do NOT trim the Fat and be sure to cut your pieces into equal size bites
- 8-10 yellow corn tortillas I grill mine
- 4-5 cloves fresh garlic chopped
- 1 small bunch fresh cilantro
- 6-8 cherry tomatoes cut in half
- 1/2 small serrano slided or chopped
- 2 Bay Leaves
- Coarse Salt to taste
- Coarse Black Pepper to taste
- 3 TBSP Vegetable Oil
- 1 tsp Cuman
- 1 tsp Paprika
- 1 tsp chili powder
Instructions
- Preheat Oven to 300* and place rack in the lower position
- Cut the pork into equal size pieces leaving ALL of the fat and add it to your dutch oven
- Heat Oil in your Dutch Oven and toss in onion halves and get a nice char
- (Squeeze orange and limes and add remaining parts to the pot)
throw in your garlic, bay leaves and the rest of your orange and lime
- Add in the liquids next
water and Cerveza!
- Bring everything to a boil and cover the dutch oven with the lid.
- Place dutch oven in the preheated oven and cook for 2 hours until meat is fall apart tender.
- Line a cookie sheet with foil--I recommend DOUBLE lining it.
- Remove dutch oven from the oven and at this point, using a slotted spoon, remove the meat from the juice and place on a foil lined cookie sheet. I also added my onions to the cookie sheet as well.
- Turn the oven to BROIL and place meat in there and cook approximately 8-10 mins and then turn over and cook for another 5 minutes or so.
- Sift out all of the BITS from your juice and place back on the burner and bring to a boil
- You want to reduce your sauce by at least half. It will thicken more as it cools.
- Remove the meat from the oven and shred with a fork and then place it back in the juice
- Chop onion, tomatoes, cilantro and serrano and get ready to make some tacos
- Heat up or GRILL your tortillas
- Don't forget to top off with your homemade salsa as well!
