Low Carb JalapeƱo Cheddar Muffins

grab and go! These low carb snack are buttery, cheesy and have a nice little crunch!
Ingredients
- 3/4 Cup Almond Flour
- 1/4 Cup Coconut Flour optional
- 1 tsp baking powder BUY it with NO ALUMINUM!
- to taste course salt
- 1 tsp granulated garlic
- 1 tsp onion power
- 2 fresh or jarred jalepenos chopped
- 2 green onions chopped, optional
- 1 cup cheddar cheese grated
- 2 eggs beaten
- 4 TBSP butter melted BUT cooled
Instructions
- Mix dry ingredients together in a bowl
flours, seasonings and baking powder
- add in the cheese and combine
- Next we are going to add in the chopped jalapeƱos and onions and again combine well
- Beat the two eggs and add to the dry ingredients and combine well
- now add your slightly cooled butter and mix everything together
***Batter will be heavy
****cooling butter slightly avoids scrambling the eggs
- Bake at 350* for 18-20 minutes until golden and buttery delicous!
- Immediately remove and place on cooling rack and Enjoy!
