Sunday Funday at the Fierro’s usually means A LOT of MEAL prep for the upcoming week. And we LOVE our breakfast so that is why I came up with a RATHER HEARTY breakfast sandwich that is sure to fill us UP!
I make a WEEK at a time and keep in the FRIDGE but you could make as many as you wanted and FREEZE them if you prefer
Breakfast Sandwich Meal Prep

OUR favorite meal is Breakfast and lunch, oh AND DINNER.... oh never mind! ---Enjoy these HEALTHY TEXAS SIZED Breakfast Sandwiches!
Ingredients
- 10 Whole English Muffin Sliced
- 1 pound Breakfast Turkey Sausage Any breakfast meat will do
- 15 Slices Extra Sharp Cheddar or your favorite cheese
- 10 Frozen Hashbrown patty
- 15 Eggs Fried
- parchment paper
- Foil
Instructions
- Cook Hashbrowns according to directions on package although I prefer mine extra crispy so they don't get too soggy on the sandwich
- Brown your breakfast meat according to package as well
IF making Sausage patties, try to make them the size of the sandwich keeping in mind they SHRINK A LOT
- Fry eggs to your liking (me I like mine runny BUT they don't do well on a sandwich unless you have a napkin handy!)
- Tear off 10 pieces of foil and parchment paper all equal sizes and make sure they're big enough to cover BIG GIRL.
- Cut out even sized eggs
I use a WIDE MOUTH BALL JAR LID which fits perfectly on my English Muffin
- I like ONE and ONE HALF slices of cheese on my sandwich so thats why I call for 15.
I also like to use two different kinds when I'm in the mood
Go ahead and break each slice into fours
- Open English muffin
- Use 3 squares for the TOP muffin and 3 squares for the BOTTOM slice
- My famous GREEN SAUCE Is also applied to one of the slices but that is optional for those of you that CANT TAKE THE HEAT!
- Now just start stackin'!
- Go as HIGH as you choose!
- tightly wrap each sandwich in the parchment paper and then follow it with foil!
- Store in the fridge for the week!
- When you're ready for one I microwave for 1 min and let sit for a minute as well
